How to Make: Cookie Crinkles

Today, I want to share with you a recipe I found in one of my Mom's cookbooks (The Taste of Home Cookbook). This is one of my favorite recipes because it is very easy to make and it tastes AMAZING. In the Philippines, we call these cookies "Cookie Crinkles"; however, in America these cookies are called "Crackle Cookies".

To start it off, you would want to prepare each ingredient to make things much easier. Here are the ingredients:

1 cup sugar
2 eggs
1/4 cup vegetable oil
2 squares (1 ounce each) unsweetened chocolate, melted and cooled
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Confectioners' sugar

Once all the ingredients are prepared, you just follow the procedures:

  1. In a large mixing bowl, combine the sugar, eggs, oil, chocolate and vanilla. Combine the flour, baking powder and salt; gradually add to sugar mixture and mix well. Cover and refrigerate the dough for at least 2 hours.

  3. With sugared hands, shape dough into 1-inch balls. Roll in confectioners' sugar. Place 2 in. apart on greased baking sheets. Bake at 350° for 10-12 minutes or until set. Remove to wire racks to cool.

Since this is really easy to make, children can work with moms when making these delicious cookies. This recipe yields about 3 dozen cookies.
